Oven and Range Cooking Unevenly: Causes and Fixes

Oven uneven heating shows up as a dish that browns on one side only, and every oven has some hot spots. If a dish that used to cook evenly now does this, something has changed. Here is how I narrow it down, for ovens and the oven in a range, in homes from Sacramento to Elk Grove.

Oven uneven heating: start with the cooking setup
Before suspecting a part, rule out what is easy:
- Rack position. Baking on the middle rack gives the most even results. Top and bottom racks are closer to the elements.
- Pans. Dark, thin or warped pans brown unevenly. Cookie sheets that touch the oven walls block air.
- Foil on the floor or racks. It blocks airflow and reflects heat to odd places, and on the oven floor it can damage the element and finish.
- Too many pans at once. Leave room for air to move.
Test the oven
A simple test: cover a middle rack with slices of white bread and bake at 350 degrees for several minutes. The toast pattern shows the hot spots, which tells you whether you have oven uneven heating or only a pan problem. If the same spot is dark each time, that is the oven. Put an oven thermometer at the center and compare it with the set temperature. GE Appliances’ range and wall oven FAQ suggests a bake test and an oven thermometer for the same purpose.

Electric ovens
Bake element
The element at the bottom should glow evenly. Dark sections or blisters mean it is failing, and the weak side cooks slowly. A failing element is the most common cause of oven uneven heating in an electric oven. A broil element at the top that glows unevenly gives the same effect to the tops of dishes. Element replacement should be done with the power off at the breaker, and we recommend a technician.
Convection fan
On a convection oven, a fan at the back moves hot air. If the fan stops, you lose that mixing and the oven cooks unevenly, even though the elements work. A fan that rattles, wobbles or does not spin when convection is selected needs service. Do not push the blades with the oven hot.
Temperature sensor
The sensor probe at the back tells the control when to stop heating. A sensor that reads wrong gives swings, so the oven runs hot, then cool, and the food comes out uneven. This often shows up as a gap between the set and actual temperature.
Gas ovens
In a gas oven, the flame should be steady and mostly blue, spread evenly along the burner. A flame with a yellow tip or one that is missing on part of the burner points to blocked ports or a bad air mix. A weak igniter delays lighting and can contribute to oven uneven heating. Gas burner adjustments and igniter replacement should be done by a technician.

Door seal and heat loss
Run your hand around the door edge with the oven on, being careful not to touch hot metal. Strong heat escaping at one spot, or a gasket that is torn or flattened, means the oven is leaking heat. A worn hinge can also let the door sag so one side seals less well.
Range-specific causes
In a range, oven uneven heating can come from a range that has been moved and is tilted, and a cooktop that is not level affects pans on the burner. Check that it sits level and that the anti-tip bracket is still engaged. If the range was pulled away from the wall for cleaning, push it back and confirm the bracket engages the leg.

What affects repair cost
For oven uneven heating, an element or sensor is a straightforward repair on a freestanding range. A fan motor or a control board is usually more involved, and a built-in wall oven needs to be pulled out. We assess the cause first and tell you the likely work before starting.
Stop if
Stop using the oven if you see sparks, smell burning wiring, or the breaker trips. For other problems read common oven problems or oven not heating.

Common questions
Is it normal for an oven to have hot spots?
Some variation is normal. If it has recently changed, or food browns badly on one side, a part is likely failing.
Does a convection oven fix uneven heating?
It helps because the fan mixes the air. If the fan has stopped, the oven will cook unevenly even though the elements work.
Should I rotate pans during baking?
Yes, turning a pan halfway through is a good habit in almost any oven and helps even out hot spots.
Can I put foil on the bottom to catch spills?
We advise against it. Foil can block airflow, reflect heat and damage the element or the finish. Use a sheet on a lower rack instead.
